The Happy Medium

Are you a health nut who enjoys robust flavors, new and exciting tastes, and delicious zings? Well I am. I TRY to be healthy and exercise often but sometimes advertising gets the best of me. Right now I blame my limited (non-existent is more appropriate) spending funds. Once I am not a poor college student then I will be able to afford the fancy good-for-you type foods instead of my diet that consists mainly of cereal, lots of joe, popcorn, and frank’s hot sauce. Fruits and veggies don’t come cheap ESP organics.

So – I have an ongoing chatroom with my best friends from home through Facebook and we have had it for almost a year now. It’s really pretty great. I mean really really great. There is 8 of us involved in this chatroom and we have been best friends since freshman year of high school when we all met through field hockey. together, we all realized that our love for one another was stronger than our love for the sport. So we played hard – but we laughed harder. Which ultimately ended in us being a disappointing disgrace of a field hockey team. We  could never seem to find our happy medium our coach would constantly tell us in between the screaming. But we didn’t care all too much. We had each other.

So this morning, in the chatroom, we got on the topic of opening up our own salad restaurant because apparently everyone and their mothers want to drop  out of school. I love the idea. I’m the type of person who never watches TV unless it is That 70s Show, Seinfield, or Food Network. Cooking up weird and delicious foods are one of my favorite pastimes. Here are some of my concoctions…

Apple + Peanut Butter 4 Ever

Sweet-  Sizzlin Apple Schruoodles:

InGreds: Apples & Peanut Butter.

Procedure: Cut apples into really small pieces. Careful not to cut yourself. Put them into a microwave-safe mug. Add scoop of peanut butter. Place in microwave for 1 minute. Stir and ENJOY!

Modifications: Add (c)raisins, honey, cinnamon, yogurt, granola, bananas, crushed cereal, ice cream, sprinkles, or whatever your heart desires.

Spicy- Frank’s Popcorn:

InGreds: Popcorn kernels, vegetable oil, frank’s hot sauce, parmesan cheese.

Procedure: Coat large cooking pot with vegetable oil. Pour popcorn kernels in to cover bottom of pot with no layering. Put on high heat. Cover and wait till they pop. Enjoy the chaos that will take place inside the pot. Once it stops then it’s time for the seasoning. Season to taste. I drench the popcorn in frank’s hot sauce and sprinkle parm cheese.

Modifications: Any combination of the following is incredibly delicious as well: dill, lemon pepper, feta cheese, salt, butter, garlic salt, onion salt, OR for a sweet tooth- nuts, M&Ms, raisins.. be creative!!

So I guess my point to this post is that I have an interest in silly food combinations. I’ve got lots more. But I can’t post them all now ! I will get too hungry. The Happy Medium seems to fit as a title because I always have trouble finding it. This will help people find their happy medium for whatever the situation. Taste and Nutrition, Expensive and Cheap, Satisfying and Good-For-You, Too Much and Too Little… catch my drift?
